To close out this series, we are making a comforting, savory, and plant-based breakfast set: Shokupan topped with Umami Mushroom & Tofu Scramble, paired with a quick, soul-warming Wakame Miso Soup and gentle hot tea. The turmeric gives the tofu a beautiful golden color, while the soy sauce and browned mushrooms pack this toast with deep, savory flavor. 🌿 Day 7 — The Day of Gratitude Eat slowly, feel full before the plate ends 🍞 1. Shokupan with Tofu Scramble + Mushrooms Ingredients: • 1 slice Shokupan (Japanese Milk Bread) • 80g Firm Tofu • 3 Mushrooms (sliced) • 1 tsp Soy Sauce • Pinch of Turmeric (for that beautiful golden color!) • Pinch of Garlic Powder • Green Onion (optional, for garnish) Steps: Crumble the firm tofu into small, bite-sized pieces. Sauté the sliced mushrooms in a pan first until they are nicely browned and release their umami flavor. Add the crumbled tofu and all your seasonings (soy sauce, turmeric, garlic powder). Cook until everything is warm, fragrant, and slightly golden. Spoon the savory scramble generously onto your toasted Shokupan. 🥣 2. Quick Miso Soup with Wakame Ingredients: • 1 cup Hot Water • 1 tsp Miso Paste • Pinch of Dried Wakame (seaweed) • Tofu cubes (optional) Steps: Soak the dried wakame in water for 1 minute until it expands. Dissolve the miso paste into the hot water (make sure the water is hot, but not boiling, to preserve the healthy probiotics in the miso!). Add the rehydrated wakame and optional tofu cubes. 🍵 3. Warm Tea • Brew a cup of any gentle tea you love!
