Meju is Chef Hooni Kim’s third restaurant, tucked away behind a small banchan shop in Queens, not Manhattan :) Unlike his previous restaurants (Danji, Hanjan), Meju focuses on traditional Korean fermented foods and has earned a Michelin star for its dedication. Here, the emphasis is not on just eating the dishes, but on learning about the 3 essential Korean sauces – doenjang, ganjang, and gochujang – and savoring the true essence of these fermented ingredients.
