Today we're making a very quick and easy Cheese Mini Pizzas with Puff pastry. I wanted a quick snack recipe that didn't require making the whole pizza from scratch. Using store-bought puff pastry makes this take almost no effort. You basically just fill the dough with tomato, salami and cheese and then bake it. It comes out crispy outside and soft inside. It works great as a snack, but it's also really GREAT the next morning with a cup of tea or juice.
