Katsuobushi Croquettes (approx. 15 small croquettes) [Ingredients] Filling Potatoes (boiled or microwaved at 600W for 5-6 minutes)...4 (500g) Pork belly (cut into 1x1cm pieces)...120g Lotus root (peeled and roughly chopped)...40g Shimeji mushrooms (stem) (Tear into small pieces with your hands)...1/2 pack ・Fried tofu (roughly chopped)...1 piece ・Katsuobushi (dried bonito flakes)...10g ・Salad oil...1 tablespoon [A] ・Ginger (minced)...1 teaspoon ・Soy sauce...2 tablespoons ・Mirin...1 tablespoon ・Sake...1 tablespoon ・Sugar...1 teaspoon Batter ・Rice flour...4 tablespoons ・Egg...1 ・Water...4-5 tablespoons Batter ・Breadcrumbs...14 tablespoons ・Rice flour...1.5 tablespoons ・Kakinotane (persimmon seeds)...1.5 tablespoons [Directions] 1. Peel the potatoes and mash them in a large bowl. 2. Add salad oil to a frying pan, add the pork belly, and fry over medium heat. Add the fried tofu, shimeji mushrooms, and lotus root, and continue to fry until moist. Once the pork is cooked through, turn off the heat, add [A] and return to the heat and stir-fry, then add the bonito flakes and stir-fry again, then turn off the heat. ③ Add ② to ① and mix, then divide into around 15 pieces and shape into portions. ④ In another container, add the rice flour and water and mix well to prevent lumps.
