Mother’s Peach Pie - Sunday Subscriber Series #22- Summer Taste on a Plate!

Mother’s Peach Pie 3/4 cup sugar 3 Tablespoons cornstarch 1 cup boiling water 1 (3 ounce) package peach-flavored Jell-o 3-4 cups pealed and sliced peaches 1 baked pie shell Whipped Topping Combine sugar, cornstarch, and boiling water in a saucepan. Cook over medium heat, stirring occasionally until thickened. This will take approximately five minutes. Removed from the heat. Add the peach gelatin, mixing well. Cool until lukewarm. Wash, peel, and slice peaches. Add peaches to the gelatin and pour into the pie shell. Refrigerate, allowing the pie to set up for several hours. Slice and serve with Cool Whip, if desired.
