Ingredients For Making Reshmi Chicken - Serves 4 to 5 For Marinating the Chicken: 550g /1.2 lb boneless, skinless chicken thighs (or breast) 1 tsp finely grated ginger garlic paste 1 tsp lemon or lime juice ¼ tsp ground black pepper ½ tsp Kashmiri red chilli powder 3 tbsp Greek thick plain yogurt ( use 4 tbsp if using regular curd) 1 tsp salt Whole Spices: 1 small petal of star anise (do not overuse) 4 green cardamoms 4 cloves 1 small cinnamon stick For the Curry Base: 360 gm / 2 medium onion, roughly sliced 1 tbsp oil (for frying onions) 40 gm / 10 to 12 cashew nuts (soaked in hot water for 1 hour) ⅓ cup water (for blending) For Cooking: 1 tbsp oil 1 heaped tbsp ghee (or just oil if preferred) 1 tsp finely grated ginger garlic paste 1 tsp Kashmiri chilli powder 1 tsp ground coriander (dhania) ½ tsp ground cumin (jeera) ½ tsp garam masala powder 1 tsp sugar (optional, to balance flavors) Salt to taste ½ cup thick coconut milk (or cream if preferred) ½ cup hot water Finishing Touches: ½ tsp kasoori methi (dried fenugreek leaves) 2 to 3 tbsp chopped fresh coriander leaves 2–3 whole green chillies (optional) 1 tsp ghee KEEP IN TOUCH FOOD LOVERS - My email - [email protected].
