We often cook chicken legs this way in the oven, and it's perfect for shashlik. I add salt at a rate of 7g per 1kg of meat. If you can't cook sous-vide, marinate the ribs in the same marinade in the refrigerator for 2-24 hours, then bake at 200°C for 60 minutes. When I bake ribs in the oven, I turn them halfway through the hour. - You can cook beef ribs using the sous-vide method; lamb can be cooked either sous-vide or simply roasted.
