Today I'm sharing the recipe for a true Italian walnut cake – tender, airy, and rich at the same time. It combines the crunch of walnuts, the intense flavor of dark chocolate, and the smooth mascarpone cream. This isn't just a dessert – it's an exquisite treat that will brighten up any holiday. Let's cook together! Recipe: ✅ Walnut sponge cake (flourless): 150 g walnuts (roasted). Minced meat. 5 egg whites. 1 pinch of salt. Beat until fluffy. 200 g sugar. Add gradually in small portions. Beat until the mixture is stable and glossy. 1 tablespoon lemon juice. Stir. 1 tablespoon cornstarch. Stir until smooth. Add chopped walnuts. Spread half of the dough (35 x 25 cm) evenly on top. Bake in a preheated oven at 200°C for 8–10 minutes. Repeat with the second half of the dough. Trim the nut biscuits slightly if necessary. Cut into 3 equal pieces. ✅ Chocolate: 150g dark chocolate. Melt in the microwave or in a water bath. Stir until smooth. Spread evenly over the nut biscuit. Let it set. ✅ Cream: 350 g cream cheese (mascarpone). 2-3 tablespoons of powdered sugar. Vanilla to taste. Stir until smooth. 350 g cream (~33–36%). Whisk the cream until thick. Grease each layer of nut cookies evenly. Decorate. Keep refrigerated for at least a few hours.
