INGREDIENTS: 500g peeled and chopped pumpkin ½ teaspoon salt 1 cinnamon stick Water for cooking the pumpkin Zest of 1 orange 2 eggs ½ cup sugar = 110g = 6 tablespoons 3 cups wheat flour = 420g = 21 tablespoons ½ teaspoon salt 1 tablespoon baking powder = 20g Enough vegetable oil for frying Sugar and cinnamon for coating the buñuelos after frying. PREPARATION: Cook the pumpkin in water with a cinnamon stick and 1/2 teaspoon of salt. Boil until soft, about 10 minutes. Place in a colander and let it cool for a few hours. In a bowl, mash the pumpkin and add the eggs, sugar, and orange zest. Mix well. Add the flour, mix again, and finally add the baking powder. Mix thoroughly. The dough is ready. In a frying pan or casserole dish, heat the oil over medium heat. When it reaches approximately 160°C, begin adding spoonfuls of the dough. They will puff up and form irregularly shaped balls. Let them brown completely. Remove from the oil and place them in a container lined with absorbent paper to drain the excess oil.
