CAKE INGREDIENTS: 4 eggs 2 cups all-purpose flour = 280g = 14 tablespoons 1 cup sugar = 220g = 12 tablespoons 1 tablespoon baking powder = 20g 1/2 cup coconut milk = 125ml = 10 tablespoons 1 pinch of salt 1 rectangular 22 x 30cm pan greased with butter, margarine, or oil. INGREDIENTS FOR THE THREE-MILK CREAM: 1 can (395g) sweetened condensed milk 1 can heavy cream (measure using the same can as the sweetened condensed milk) 1 can coconut milk (measure using the same can as the sweetened condensed milk) FOR THE TOPPING: Shredded coconut to taste Ground cinnamon for sprinkling PREPARATION OF THE CAKE: Preheat the oven to 180°C (350°F). Beat the eggs with the sugar until you have a pale cream and the eggs have doubled in volume. Add the coconut milk and beat again. Add the flour mixed with the baking powder and salt (sifted) and beat until smooth and lump-free. Pour the batter into a greased baking pan (the same one you can use to serve the finished dessert). Bake at 180°C (350°F) for 30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool to room temperature. *If you want to remove it from the pan, unmold the cake and place it in the serving dish before pouring the cream over it. PREPARATION OF THE THREE-MILK CREAM: In a saucepan, thoroughly mix the three milks: coconut milk, sweetened condensed milk, and heavy cream. TO ASSEMBLE: Prick the cake all over with a toothpick, fork, or knife. Pour the cream over the cake and cover the surface with shredded coconut. Refrigerate for at least 4 hours to allow the cream to soak in. Optional: Sprinkle with ground cinnamon before serving. It's ready to serve, eat, and enjoy!
