Ingredients: Bread flour 250 g Wholewheat flour 250 g Water 365 g Salt 10 g Instant yeast 5/5 g Olive oil 10 g Mix the flours, and then add the water and mix until just combined. Let it rest for 30 minutes. Add the yeast with the remaining 15 g of water. Knead for 3 minutes. Add the salt along with a little water. Knead for another 3 minutes. Add olive oil and knead. The dough should be smooth and elastic, but it doesn’t need to achieve a full windowpane. Place the dough in a lightly greased bowl and let it ferment for 90 minutes at around 25 °C. Divide the dough into 3 equal pieces. Let them rest for 20 minutes. Shape each piece as shown in the video and place it on the baking tray. Proof for 45-60 minutes, or until the dough has increased in volume by about 70-80%. Sprinkle some flour on top, and make 3 diagonal slashes at about a 30° angle.
