The effort is well worth it, so please try making it on the weekend! 🍶Subscribe to our channel here: →   / @kappo_yoshida_ch   ■Mizutaki (Pork Hot Pot) 【Ingredients】 ・Pork belly (block)...500g ・Ginger...½ piece ・White leek...1 stalk ・Water...appropriate amount ・Bok choy...1 bunch (A) Seasonings ▫︎Pork soaking liquid...300ml ▫︎Sugar...4 tablespoons ▫︎Sake...2 tablespoons ▫︎Soy sauce...3 tablespoons ◎For finishing ▫︎Potato starch...appropriate amount ▫︎Mustard...to taste 【Instructions】 ①Wash the ginger well and slice it with the skin on. Julienne the white part of the leek and soak it in water to make "shredded leek." ②Heat a frying pan and cook the pork belly without cutting it, starting with the fatty side down. ③ Once the pork is nicely browned all over, cut it into bite-sized pieces and transfer it to a pot. Add plenty of water, the sliced ​​ginger from step ①, and the green part of the leek, and bring to a boil over medium heat. ④ Simmer over medium heat for about 90 minutes. ⑤ Meanwhile, in a separate pot, boil the bok choy for 30 seconds to 1 minute, then cool it in water and squeeze out the excess water. ⑤ Remove the pork belly, strain the remaining broth, and let it cool for about 1 hour. ⑥ Once the broth has cooled, the fat will solidify on the surface, so carefully remove only this solidified fat. ⑦ Add ingredients A to a pot and bring to a boil. ⑧ Place the broth from step ⑦ and the pork belly in a heatproof container and steam over medium heat for about 1 hour. ⑨ Once steamed, transfer only the broth to a separate frying pan. While heating, dissolve cornstarch in water and thicken to your desired consistency. ⑩ Arrange the pork belly on a plate and pour plenty of the thickened sauce from ⑨ over it.
