Pastissets, or "tortas de alma," are a typical sweet treat from the Lower Aragon region. Filled with angel hair (pumpkin jam) and pumpkin preserve, they are an irresistible delicacy. INGREDIENTS: 1 small glass of sugar 1 1/2 small glasses of oil 1/2 small glass of anise liqueur 1/2 small glass of muscatel wine 1 medium egg Flour (approximately 450 grams) 1/2 packet of baking powder Pumpkin preserve Angel hair (pumpkin jam) PREPARATION: In a bowl, combine the sugar, oil, anise liqueur, and muscatel wine. Mix well and gradually add the flour mixed with the baking powder. Knead the dough. Add the egg and continue mixing. Turn the dough out onto a marble surface to continue kneading. Once the dough is well kneaded and no longer sticks to the sides of the bowl, take two pieces of parchment paper and place portions of dough between them. Roll the dough out thinly with a rolling pin. Using a cookie cutter, cut out circles. Place a spoonful of pumpkin filling (or angel hair pasta) on top of each circle. Then, place another circle on top to cover the filling and seal the edges by pressing them together or creating a rim. Preheat the oven and bake on the second rack from the top at 200 degrees Celsius (390 degrees Fahrenheit) for about 25 minutes. When they come out of the oven, sprinkle them with sugar. If using a fan oven, set the temperature to 170 degrees Celsius (340 degrees Fahrenheit).
