My love/hate relationship with Takeda knives continues with this wide body 254mm Takeda stainless clad gyuto, demonstrating how long it takes to sharpen these on stones to a professional standard. This knife did have some tiny chips, which they all do, so that it took slightly longer than usual. However, this still took almost an hour, and I've sharpened 100's of these knives. For the professional sharpener who gets these knives to sharpen, always assess and charge accordingly. For anyone who owns these knives, maintain the Scandi on a fine grit stone as needed.
