Our new series dedicated to traditional Sicilian dishes continues. Today, Donna Rosalia teaches us how to cook "Sfinci" (or sfingi, depending on the area), small morsels of leavened dough fried in oil. It's one of the oldest recipes that Grandma kept and that she still makes today, for special occasions like Christmas, or as a Sunday dessert... or simply for a treat. The only essential requirement: eat them all hot together! Episode #2 - The Sfinci Ingredients: • 300 g of 00 flour • 50 g of granulated sugar • 1 boiled potato (100 g) • 1 egg • 50 g of butter • 15 g of yeast • Cinnamon (to taste) • Chocolate chips (optional) Method: First, place the flour in a bowl, add the boiled and mashed potato, cinnamon, and sugar. In another bowl, dissolve the yeast with the sugar and a little cold water. Once the yeast is completely dissolved, add it to the mixture prepared initially, mix well, and then add the butter and one egg. Mix everything together until the dough is slippery in your hands. Let it rest for two to three hours. Once the dough has risen, shape the dough into balls by flattening it with your hands, and scoop up the resulting ball between your thumb and forefinger with a spoon dipped in water. Transfer to the pan with hot oil and fry until golden brown. Drain the excess oil from the sfinci, then toss them in the granulated sugar. Serve them hot on a platter. Enjoy your meal!
