I hope this brings a quiet, cool summer afternoon into your day. ☀️ ───────────────────── ▶ RECIPE ───────────────────── 🍌 Japanese-Style Matcha Banana Cake (Rice flour-based — dairy-free) Ingredients (1 loaf) ・Ripe bananas — 2, mashed ・Rice oil — 30ml ・Soy milk — 210ml ・Rice flour — 220g ・Matcha powder — 20g ・Brown sugar — 60g ・Salt — a pinch ・Baking powder — 10g ・Pistachios — as desired (optional) Instructions ① Mash bananas in a bag, then add rice oil and soy milk. Mix well. ② Add rice flour, matcha powder, brown sugar, salt, and baking powder. Mix until combined. ③ Fold in pistachios if using. ④ Pour into a loaf pan and bake at 180°C (356°F) for 40 minutes. ───────────────────── 🍜 Hiyashi Chuka (Japanese cold ramen — a classic summer dish) Ingredients (1 serving) ・Instant hiyashi chuka noodles — 1 serving (with sauce packet) ・Tomato — cut into wedges ・Cucumber — julienned Instructions ① Boil noodles according to package directions.
