Hi! I'm Tuma, a Japanese woman living in Tohoku, Japan. Enjoying the solo life. 🇯🇵 A quiet day: cleaning, repotting plants, and cooking four of Japan's everyday superfoods. Hijiki, soba, goma-ae, green tea — the dishes that have been in Japanese homes and school lunches since childhood. It tasted just like my great-grandmother used to make. 🌿 I hope you enjoy a slow, nourishing day in Japan with me. ───────────────────── ▶ RECIPE ───────────────────── 🍵 Matcha Latte (Budget Version) Ingredients (1 serving) ・Green tea powder — 2 tsp ・Brown sugar — 1 tbsp ・Hot water — as needed ・Soy milk — as needed ・Ice — as needed Instructions ① Dissolve green tea powder and brown sugar in hot water. ② Pour over ice and add soy milk. ③ Slowly layer the green tea mixture on top. ───────────────────── 🌊 Hijiki no Nimono Ingredients ・Dried hijiki — 20g ・Carrot — ⅓, julienned ・Aburaage — ½ piece (10g), cut into pieces ・Pre-cooked soybeans — as needed ・Water — 150ml ・Dashi granules — ½ tsp ・Sugar — ½ tbsp ・Mirin — 2 tbsp ・Soy sauce — 2 tbsp (or substitute mirin + soy sauce with mentsuyu) ・Oil — for cooking Instructions ① Soak hijiki in water to rehydrate. Scoop out carefully (leaving debris at bottom) and rinse a few times. ② Stir-fry carrot in a lightly oiled pan. Add soybeans and hijiki and cook until water evaporates. ③ Add aburaage and stir-fry briefly. ④ Add water, dashi, sugar, mirin, and soy sauce. Simmer for about 7 minutes. ───────────────────── 🥬 Spinach Goma-ae Ingredients (1 serving) ・Spinach — 100g ・Miso — 1 tsp ・Sugar — ½ tbsp ・Ground black sesame — 1.5 tbsp Instructions ① Blanch spinach (or microwave). Let cool and squeeze out water. ② Mix miso, sugar, and ground sesame together. ③ Toss with spinach. ───────────────────── 🍜 Neba Neba Soba Ingredients (1 serving) ・Soba noodles — 1 serving ・Mentsuyu, diluted with water — to taste ・Frozen chopped okra — as needed ・Natto — 1 pack ・Nagaimo (Japanese mountain yam) — as needed, grated ・Shichimi, wasabi, green onion — to taste Instructions ① Boil soba. Rinse well in cold water and plate. ② Pour over mentsuyu diluted with water. ③ Top with okra, natto, and nagaimo.
