Rosquillas de San Blas Caseras: ¿Tradicionales o Chocolate?

🍩The classic ones… but with our own twist. In this traditional recipe, we've given them a little makeover to make them more modern, juicier, and incredibly delicious. We don't cut corners, we don't hide any secrets: 👉 we explain the whole process step by step, 👉 we pay attention to the texture (less flour, a more tender dough), 👉 and yes… we add a touch more sugar, because enjoyment counts too 😄 We've also made some "non-doughnuts" with a chocolate coating 🍩🍫, so everyone can have their favorite version. The classic ones, glazed with egg white and sugar, are especially moist and shiny, further hydrating the dough. We don't know if these doughnuts have more or fewer calories than store-bought ones, but we are sure they're healthier, because we know exactly what's in them 😊 👉 Now you tell us: Do you prefer the traditional ones or the chocolate ones? (By the way… what do you call those colorful little balls at home? 😉) 🍽️ Welcome to    / @eltxokodejuancarlos  , the channel where traditional cuisine meets respect for ingredients and health. 🍽 Ingredients: 🥚 3 eggs 🫒 60 ml extra virgin olive oil 🍬 60 g sugar 🌾 300 g flour (may require more) 🌾 10 g baking powder 💧 Anise essence to taste For the glaze: 🥚 1 egg white 🍬 100 g icing sugar 💧 Anise essence to taste ✍ Steps: ✅ In a bowl, beat the three whole eggs, add the sugar and beat again, then the oil and the anise essence or anise seeds. Mix everything well and, using a stand mixer or by hand with a spatula or spoon, gradually add the flour and baking powder in several additions. It usually requires 300 g of flour, but not much more. ✅ Sprinkle some flour on the work surface and take out the dough, kneading it by hand until it's slightly sticky. It's best to leave it a little "on the edge" so they'll be more moist. Let it rest. ✅ To shape the doughnuts, grease your hands with a little oil, which you also spread on the work surface. Take out the dough, cut portions, and shape the doughnuts to the desired size and shape. Bake at 165°C (325°F) with the oven set to conventional (top and bottom heat), preferably without the fan, for 12 to 15 minutes, depending on the size and power of your oven. ✅ Once they've cooled slightly, coat them in a glaze made by whipping an egg white to stiff peaks with 100g (3/4 cup) of powdered sugar.
