Add 4 tablespoons of fish sauce, 2 tablespoons of plum juice, 2 tablespoons of vinegar, 1 tablespoon of garlic, a little ginger extract, 1 tablespoon of red pepper powder, and 2 tablespoons of sesame seeds and mix thoroughly. [Spicy spinach and vegetables] 1. Trim 1 bunch of spinach, wash it thoroughly and put it in a sieve. 2. Pour 2L of water into a pot and when it boils, add 1 tablespoon of salt and spinach, turn over and blanch for about 2 minutes. 3. Rinse in cold water, gently squeeze out the water and place in a bowl. 4. Add 0.5 tablespoons of garlic, 2 tablespoons of fish sauce, 1 tablespoon of sesame oil, and 2 tablespoons of sesame salt and season lightly. [Stir-fried shiitake mushrooms] 1. Soak 5 to 6 dried shiitake mushrooms (fresh shiitake mushrooms) in water 1 hour in advance, squeeze out the moisture, and slice into thin slices. 2. Slice 1/2 onion, 2 Cheongyang peppers, and 1 red pepper. 3. Make seasoning (3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon garlic, 3 tablespoons starch syrup, 2 tablespoons cooking wine, 1 tablespoon sesame oil, a little pepper, 1 tablespoon chopped green onion) 4. Add the seasoning to the pan and when it boils, add the shiitake mushrooms and fry for about 1 minute. 5. Add the sliced onion and pepper and fry until the onion wilts. 6. Sprinkle with sesame seeds and finish. [Spicy bean sprouts] 1. Wash 500g of bean sprouts thoroughly and place them in a pot. 2. Pour 1 cup of water and boil for about 5 minutes. Immediately rinse in cold water and strain through a sieve into a bowl. 3. Add 1/2 chopped green onion, 1 tablespoon red pepper powder, 1 tablespoon garlic, 2 tablespoons fish sauce, 1 teaspoon salt, 1 tablespoon sesame oil, and 1 tablespoon sesame salt. 4. Season well and it’s done. [Beef marbled soybean paste stew] 1. Chop 1 green onion, slice 1/2 onion, and slice 1/2 zucchini lengthwise. 2. Thickly slice 1 potato, finely chop 2 Cheongyang peppers, and 1 red pepper. 3. Cut one head of tofu into pieces. 4. Put 1 tablespoon of sesame oil in a pan, add 200-300g of beef brisket, and fry slowly over medium-low heat to prevent it from burning. 5. When the color of the meat turns white, add the chopped green onions and fry until slightly wilted, then pour in 500ml of rice water. 6. Add 2 tablespoons of soybean paste, onion, pumpkin, and potato, 1 tablespoon of garlic, and 1 tablespoon of red pepper powder and boil over medium heat for about 5 minutes. 7. Add sliced tofu and pepper and boil for about 1 to 2 minutes more.
