1. Chicken Fricassee Ingredients: 1 whole chicken (cleaned and washed with 1 lemon) 1 chopped onion 3 minced garlic cloves 1 teaspoon salt 1 teaspoon paprika 1/2 teaspoon black pepper Hot water (enough to cover the chicken) 2 cans of sweetcorn 1 can of cream (200g) 1 jar of creamy cream cheese Chicken cooking broth 1 chopped tomato Cherries to taste More salt and black pepper to taste Sliced or grated mozzarella cheese Sweet potato sticks (optional) Instructions: Wash the chicken with the juice of 1 lemon, let it sit for 2 minutes, then rinse. Sauté the onion and garlic in oil, add the chicken, and season with salt, paprika, and pepper. Cover with hot water and cook for 20 minutes in a pressure cooker. Shred the chicken (you can use a blender). Blend the corn, cream, cream cheese, and cooking liquid in a blender. Set aside. Sauté garlic, onion, and tomato, add paprika, shredded chicken, and cream. Adjust salt, pepper, and parsley. Assemble: layer chicken, cheese, more chicken, and more cheese. Bake until golden brown. Finish with shoestring potatoes. 2. Bacon and Calabresa Farofa Ingredients: 100g bacon 1 chopped calabresa 1 chopped onion 3 minced garlic cloves 1 grated carrot (finely grated) 1 teaspoon paprika Pinch of black pepper 2 tablespoons butter 500g cassava flour Cherries to taste Instructions: Fry the bacon and calabresa until golden brown. Set aside. Sauté the onion and garlic in the same pan. Add the carrot, paprika, pepper, and butter. Return with the bacon and calabresa. Mix in the flour. Finish with the parsley. 3. Fluffy White Rice Ingredients: 3 cloves of minced garlic 3 tablespoons of oil 2 cups of uncooked rice 1 teaspoon of salt Hot water (enough to cover) Instructions: Sauté the garlic in the oil. Add the rice and salt. Sauté. Cover with water, cover, and cook until dry. Re-cover, over low heat, for another 10–15 minutes. 4. Steak with Onions Ingredients: Steaks (amount to taste) 1 teaspoon of salt Black pepper, paprika to taste 3 cloves of minced garlic 2 sliced onions Oil for frying Instructions: Season the steaks with salt, pepper, paprika, and garlic. Fry in the oil until golden brown on both sides. Add the onion and let it caramelize. Turn the steaks over again. Set aside. 5. Simple Green Salad Ingredients: Lettuce leaves 1 cucumber, sliced 1 tomato, sliced Instructions: Clean and wash all ingredients thoroughly. Arrange the leaves on a plate. Surround with cucumber and tomato slices. Serve. 6. Pineapple and Gelatin Chilled Dessert Ingredients: 1 medium pineapple, chopped (core removed) 1/2 cup sugar 500ml water 2 pineapple-flavored gelatins 1 can of condensed milk (395g) 2 boxes of heavy cream (400g) Instructions: Cook the pineapple with sugar and water for 20 minutes. Add the gelatin, mix well, and let cool for 10 minutes. Mix in the condensed milk and heavy cream. Transfer to a bowl and refrigerate until firm.
