In case you don't know what MBEJU is, it's a recipe from the Argentine coast (it's disputed with Paraguay). It's a type of tortilla or flattened bread, ideal for breakfast or a snack, even lunch or dinner; the truth is, it's delicious. Mbeyú or MBEJÚ is a typical dish of Paraguayan cuisine, although there is some dispute as to whether it could be from Corrientes. Whatever its origin, we must say that it's delicious, requires few ingredients, and is very easy to make. This recipe is a close cousin of chipa and perhaps a distant cousin of Paraguayan soup. Few ingredients simplify preparing mbejú, and it's quite simple and quick to cook. Grilled or oven-baked, plain or stuffed, thin or thick—it's all up to you. Ingredients Tassava starch (starch) 250 g Oven-baked butter, 100 g Coarsely grated cheese, 200 g, Mar del Plata style Salt and pepper to taste Milk or water, 2 tablespoons Step by Step In a bowl, place the cassava starch, add the oven-baked butter, and begin to mix. No need to knead, just pinch to combine the ingredients. Once they're well combined, add the grated cheese, season with salt and pepper to taste, and continue pinching and combining the ingredients. Add the milk and combine. Place a pan over medium heat and begin preparing our mbeyú. Add just a little bit of butter to the pan. Add the desired amount of butter to your liking. I say to taste because you can make it thin or thick. The more you add, the longer the cooking time. Use a spoon to press down to compact the mixture and make it easier to turn. Cook it for 7 to 10 minutes per side and it's ready to eat. Note: the traditional one uses a Creole cheese; we substitute it with Mardel Plata or semi-hard cheese.
