Ingredients For the #chickpeaburgers Cooked chickpeas, 400g Cooked and barely cooked rice, 200g Sautéed vegetables, 100g Cumin, 1 teaspoon Oats, 6-8 tablespoons Salt and pepper to taste For the #lentilburgers Cooked lentils, 300g Cooked and barely cooked rice, 200g Sautéed vegetables, 100g Egg, 1 (optional) Cooked spinach, 100g (1 package) Oats, 8-10 tablespoons Cornstarch, 2 tablespoons Salt and pepper to taste Step by Step Chickpea Burgers In a food processor or blender, place the chickpeas, rice, and sofrito, a teaspoon of cumin (just a little because it's invasive), salt and pepper to taste, and blend. We'll do this for a short time because we want a rustic mixture, leaving chunks of chickpeas for texture. Return to a bowl and add 6 to 8 tablespoons of oats, mix, and set aside. Lentil Burgers In a food processor or blender, place the rice, lentils, and egg, blend, and then add the sofrito, 3-4 tablespoons of oats, salt and pepper to taste, and blend a little more. Pour the mixture into a bowl and add 3-4 more tablespoons of oats, two tablespoons of cornstarch, and mix until combined. Set aside. It's time to assemble the burgers. Use a mold to form them. Try to make sure they're all the same size so they cook at the same time. Tip: You can freeze them cooked or raw, always using a separator so you can defrost them individually. Before cooking, refrigerate them for at least 40-60 minutes. You can omit the egg for lentil burgers. You can replace the spinach with chard, beet greens, or broccoli.
