Turn Any Vegetable Into a Creamy, Flavour‑Packed Dip

Add carrots to a tray with olive oil and salt. Add the halved garlic bulb, cut side down, drizzle with oil. Roast for 30–35 minutes until soft. Alternatively air fry at 190°C (375°F) for 20–25 minutes, shaking halfway, until soft and lightly caramelised. Squeeze the garlic out of the skins. Add to a blender with carrots, butter beans, olive oil, lemon juice, cumin, and turmeric. Blend until smooth, adding water if needed. Stir through most of the parsley. Taste and adjust seasoning. Serve with remaining parsley and olive oil. Courgette, Basil, Yogurt & Tahini Dip Serves 3–4 Ingredients Vegetable 400g courgette (about 4 cups), cut in half then half again Creamy Component 25g thick vegan yogurt (about 2 tbsp) Flavour 1 small garlic clove Small bunch basil (about 1 cup loosely packed) 3 tbsp nutritional yeast Fat 75g tahini (about 1/3 cup) 1 tbsp olive oil Acid 1 tbsp lemon juice Zest of 1/2 lemon To Loosen 1 ice cube helps stop the basil from losing its colour. Method Oven: roast at 200°C (400°F) for 25–30 minutes until soft and lightly golden. Alternatively air-fry at 190°C (375°F) for 20–25 minutes, shaking halfway, until softened and slightly charred. Add courgettes to a blender with yogurt, tahini, garlic, basil, olive oil, lemon juice, and zest. Blend until smooth, adding water if needed. Taste and adjust seasoning. Serve with olive oil and extra basil. Aubergine, Tofu, Miso & Gochujang Dip Serves 3–4 Ingredients Vegetable 1 medium aubergine (about 500g / ~4 cups), halved Creamy Component 50g silken or firm tofu (about 1/4 cup) Flavourings 1 tsp white miso 1/2–1 tsp gochujang 1 tsp grated garlic 1 tsp grated ginger 1 tbsp fresh coriander, finely chopped Fat 1 tbsp olive oil 1 tsp sesame oil Acid 1 tsp rice wine vinegar To Loosen Water or olive oil as needed Method Oven: preheat to 200°C (400°F). Score aubergine, drizzle with oil and salt. Roast cut-side down for 30–40 minutes until soft. Alternatively air-fry at 200°C (400°F) for 20–25 minutes until very soft. Scoop flesh into a blender with tofu, miso, gochujang, garlic, ginger, olive oil, sesame oil, and vinegar. Blend until smooth, adding water/olive oil if needed.
