I Cooked Tofu 3 Ways… All Were Better Than Meat

Join the Earthy Goodness Kitchen Community: / earthygoodnesskitchen ------------------------------- 👨🍳 MY KITCHEN ESSENTIALS Non-Slip Cutting Board Mat - https://amzn.to/4n6GKze Microplane Zester - https://amzn.to/4m7TC6N Chopping board oil - https://amzn.to/42uRa3f A quick heads up: these are affiliate links, so if you buy through them, I may earn a small commission (thanks so much for supporting my work!) ------------------------------- RECIPES IN VIDEO: Thai Style Tofu Balls Serves 4 Ingredients: 300g extra-firm tofu, pressed (about 1 cup packed when crumbled) 1 small carrot, finely grated (about ½ cup) 2 spring onions or ½ red onion, finely chopped (about ¼ cup) 2 medium garlic cloves, minced 1 tbsp grated ginger 1 tbsp thai green curry paste 1 tsp ground coriander ½ tsp ground cumin 1 ½ tbsp light soy sauce or 1 tbsp tamari 2 tbsp tapioca starch ½ tsp baking powder (I’ve made these a few times and prefer the texture without baking powder) 60g oat flour (about ½ cup) Zest and juice of 1 lime 10g fresh coriander, chopped (about ¼ cup loosely packed) For the glaze: 2 tbsp soy sauce 1 tbsp rice wine vinegar 1½ tbsp maple syrup 1 tsp sesame oil 2–3 tbsp water to loosen 1 tbsp ketchup ½ tsp cornflour ¼ tsp sriracha (optional) To serve: Cooked jasmine rice or noodles Stir-fried vegetables Fresh coriander Lime wedges Method: – Crumble the tofu into a bowl until fine with no large chunks. – Add grated carrot, onion of choice, garlic, ginger, green curry paste, soy sauce, tapioca starch, oat flour, lime juice, baking powder and chopped coriander. Mix well to form a slightly sticky dough. – Shape into balls (about 12–16). To cook (choose your method): Air-fryer: – Air-fry at 190°C / 375°F for 12–15 minutes. Oven: – Preheat to 200°C / 400°F. – Bake for 20–25 minutes, flipping halfway. Frying pan: – Add 1–2 tsp oil to a non-stick pan over medium heat. – Fry for 8–10 minutes, turning often, until golden. Glaze: – Add all glaze ingredients to a small bowl and whisk to combine. – Pour into a pan and heat until thick and glossy. Assemble: – Coat tofu balls in the glaze and sprinkle over fresh coriander. Sticky BBQ Grated Tofu Buns with Sumac Pickled Red Onions Serves 2–3 Ingredients: 300g extra-firm tofu, coarsely grated (about 3 cups loosely packed) BBQ sauce (will thicken once blended): 400g chopped tomatoes (about ¾ cup) 4–5 soft medjool dates, pitted (about ¼ cup packed) ½ tsp liquid smoke 1 tsp smoked paprika ½ tsp granulated garlic ½ tbsp apple cider vinegar ½ tbsp balsamic vinegar 1 tsp vegan Worcestershire sauce (optional) 1 tbsp soy sauce Sumac pickled red onions: 1 medium red onion, very thinly sliced (about 1 cup) 1 tbsp lemon juice 1 tbsp apple cider vinegar 1 tsp sumac ¼ tsp salt Small pinch sugar To serve: 4 soft buns Fresh coriander or parsley (optional) Method: – Coarsely grate the tofu, pat dry and place in a large bowl. – Add the BBQ sauce ingredients to a small pan. Bring to a simmer and cook for 10 minutes. – Blend until smooth and add half to the grated tofu; keep the other half in the pan. – Mix tofu through the BBQ sauce. – Spread onto a lined tray or into an air-fryer basket. Oven baking: – Bake at 200°C / 400°F for 25–30 minutes, stirring halfway. – Cook until sticky, glossy and lightly caramelised at the edges. Air-fryer: – Air-fry at 190°C / 355°F for 15–20 minutes, stirring halfway. – Cook until sticky and slightly caramelised around the edges. Sumac pickled red onions: – Add sliced onion, lemon juice, apple cider vinegar, sumac, salt and sugar to a bowl. – Massage for 20–30 seconds until softened and bright pink. – Leave to pickle for at least 30 minutes.
