(This is a dry egg white, you can replace 4 chicken egg whites) Water - 112 ml. (only for soaking albumin, not needed for raw and pasteurized egg whites) Milk - 500 ml. (I have 2.5% fat) Powdered milk - 80 g. Sweetener / sweetener to taste - I have 7 g. Fitparad No. 7, which is 5 times sweeter than sugar) Instant gelatin - 32 g (the strength of my gelatin is 240 bloom) Cornstarch - 15 g (if you don't want to, you can leave it out, but it helps the gelatin bind free water and get a softer non-rubber texture) Vanillin - 2 g. ▪️ The top chocolate coating can be made in many ways, below are 2 options to choose from. For hard chocolate icing: Chocolate - 80 g (I have milk without sugar) Cocoa butter, sunflower or coconut refined - 10-20 g (10 g was enough for me) For soft glaze based on gelatin and milk (prepared in the same way as a soufflé, I don’t cook it in the video): Gelatin - 3 g. Milk - 75 ml. Powdered milk - 15 g. Simple cocoa - 15 g (you need 2-3 rubles less alkalized cocoa powder and besides, it can be bitter) Sweetener/sweetener to taste Cake weight ~ 950 g. Form diameter 18 cm. The height of the cake from the above ingredients is ~ 6 cm (of which the height of the cake is ~ 1.8 cm.)
