Vinegar Crust? 🔥 Old Montana Wild Huckleberry Pie
A rare, once a year pie made of wild huckleberries! Plus old fashioned lard and a splash of vinegar. Yep, this pie is straight out of history. This is old Montana and the Wild West in one food. Let's cook an 1880s pie, from tools to ingredients, in the wood-burning cookstove! The dog days of summer have never tasted so good. (Just watch out for rattlesnakes in the root cellar) OLD MONTANA HUCKLEBERRY PIE 3 cups wild Montana huckleberries 1/2 cup fine sugar 1 lemon, juice plus zest 1 tsp vanilla 1/4 tsp cardamom 1/4 tsp nutmeg 1/2 cup tapioca flour simmer berries plus sugar plus lemon on stovetop to reduce for 20-30 minutes. Let cool slightly. Add vanilla, spices, plus tapioca flour. Let sit 15 min to thicken. Pour into pie crust (see recipe below for vinegar pie crust). Bake starting at 425, slowly letting the oven cool as the pie bakes. Aprox 30 minutes. Let cool COMPLETELY. Cut and serve with whipped cream or better yet vanilla ice cream. VINEGAR PIE CRUST 2 TBS apple cider vinegar 7 TBS cold water 1 tsp salt 1/2 cup cold butter 6 TBS cold lard 2 1/2 cups sifted flour *using 2 butter knives, cut in butter and lard to the flour plus salt, until lumps look the size of peas. Add in water mixed with vinegar until the dough comes together. Work fast. Don't overtax. Chill in a disc in root cellar, covered with a damp cloth, for 1 hour. Cut in two pieces. Roll out one for bottom crust. Roll out another and slice for lattice top. 425 is the best temperature to begin baking, letting the oven cool as you go.
