Prime Rib Au Jus and Horseradish Sauce

Happy Holidays to everyone! Prime rib is such a luxurious way to celebrate during the holidays and, frankly, so easy to make – with the reverse sear method! If you have an oven, prime rib, and a digital probe thermometer… anyone can make this. The hardest part is purchasing the right prime rib for you. Regardless of what you buy though, this method and the following recipes are sure to please! Prime Rib (get whatever works for you but expect ½ to 1 pound per person depending on sides) • Generous amount of flaky salt, about a teaspoon per pound • Coarsely ground black pepper Jus • 2 cups of a good beef stock • ½-1 tablespoon Worcestershire sauce • 1 tablespoon wine (optional) • Salt and pepper Horseradish Sauce • ½ cup sour cream • 3 tablespoons prepared horseradish • 3 tablespoons mayonnaise • 1 tablespoons Dijon mustard • 1 teaspoon lemon juice • Salt and pepper • 1 tablespoon chives, finely chopped
