Smoky Competition-Like Ribs Baked in Your Oven

It’s officially summer and time to smoke ‘em if you got ‘em! But what if you don’t have a smoker or even a charcoal grill? Or, the weather just isn't cooperating... Well, I got you covered with this recipe for creating smoky, flavorful, and tender spare ribs – in your oven! I'll teach you how to trim a spare rib into a St. Louis cut rib and I’ll share some competition techniques plus some well-seasoned and tested hacks for getting ribs that taste and look like they came off a smoker. Plus I'll share my own homemade BBQ rub and BBQ sauce recipes! Ingredients: 2 racks of spare ribs but you can just get St. Louis cut ribs to save time Dry Rub 2 ounces (58g) Turbinado sugar or white sugar 1 ounce (29g) brown sugar 1.5 ounce (43g) salt, 2 ounces (58g) if you like a salty rub 1 ounce (29g) paprika 1/2 tablespoon (7g) garlic powder 1/4 tablespoon (3g) of onion powder 1 teaspoon (4g) black pepper 1/2 teaspoon (2g) Chipotle Chili powder or generic chili powder 1/4 teaspoon (~1g) cayenne Heaping 1/4 teaspoon (~2g) of msg BBQ Sauce 1 Cup (274g) Ketchup 1/2 cup (115g) White Sugar 1/4 cup (58g) Brown Sugar 1/4 cup (58g) Cola 1/4 cup (58g) Apple Cider Vinegar 2 Tablespoons (42g) Honey 1 Tablespoon (14g) Distilled Vinegar 1 Tablespoon (14g) Worcestershire Sauce 1 teaspoon (5g) salt 1/2 teaspoon (2g) black pepper 1/2 teaspoon (3g) paprika 1/4 teaspoon (1g) garlic powder 1/4 teaspoon (1g) onion powder 1/4 teaspoon (1g) lemon juice 1/4 teaspoon (1g) vanilla extract A couple dashes of liquid smoke, optional Fake Smoke Ring (optional) 1/4 cup of water 1/16 teaspoon (~0.3g) of pink cure #1 or 1/8 teaspoon (~.45g) of Morton’s Tender Quick mini spray bottle 1/4 cup of liquid smoke in a mini spray bottle You'll also need some apple juice or apple cider vinegar to moisten the ribs during the dry cooking period. Again, I recommend using a spray bottle but you could use a brush Tin Foil Wrap Heavy duty tin foil, I like 2 sheets per rib 2 Tablespoons of brown sugar per rib 2 Tablespoons of butter per rib Honey, around a tablespoon per rib Extra rub A couple dashes of your favorite hot sauce 1/4-1/2 cup of apple juice or equal amounts of apple cider vinegar and water. Total cook time is about 4 hours but most of that is inactive cooking time. 2 1/2 hours baked uncovered with an occasional spraying during the last 45 minutes. And, a final 1 1/2 hour cooked in foil so the ribs braise and tenderize.
