I'm sharing this new recipe with you with much love! š It's a delicious, soft, and fluffy bread, perfect for pairing with your favorite foods or making delicious sandwiches for breakfast. š I hope you'll try making it and share your experience with me in the comments! HERE'S THE RECIPE šš» MAKES 10 PIECES š„ š«šššš šÆšššš š¹ššššššš 650 g of wheat flour (5.5 cups) (preferably 10 to 12 g of protein). 6 g of instant dry yeast (1/2 tbsp.) NOTE: IF USING FRESH YEAST, use 18 grams. Regularly, use TRIPLE the amount of dry yeast you would use. 1 tsp of salt 40 g of sugar. (4 tbsp) 225 ML warm milk (1 cup) 2 large eggs (62 g each) 70 g unsalted butter (1/3 cup) FOR GLAZE 2 egg yolks 1 tbsp milk FOR DECORATION 40 g wheat flour (4 tbsp) 5 tbsp water NOTE!* THE CUPS I REFER TO ARE 225 ML MEASURING CUPS. AND VERY IMPORTANT!! *If you're using measuring cups, it's recommended to sift any flour first because it compacts, which means the cup holds more flour. Cup measurements are ALWAYS approximate. It's best to measure level and without pressing the cup to get the desired amount. IMPORTANT POINTS IN BREAD MAKING: *FLOUR: It must be 100% wheat flour that does not contain baking powder (NOT self-rising). The flour I'm using contains 12g of protein. You can find this information on the back of the package, although you can use anything from 10, 11, or 12g of protein. I don't recommend using less than 10g, as it would be too refined, wouldn't absorb much liquid (it would be watery), and wouldn't develop the gluten well, which is what gives bread structure and makes it developed and fluffy. EACH FLOUR HAS A DIFFERENT ABSORPTION CAPACITY. This means that some absorb more liquid than others; you'll probably need a little more milk. If so, I suggest adding it little by little, without overdoing it so you don't need to add more flour later. TO DISSOLVE THE YEAST: Remember that we are working with a LIVING BEING, and yeast is sensitive to certain temperatures. Use warm water or milk, NOT HOT enough to be tolerable when inserting a finger and NOT burn yourself. If you want to use a thermometer, it should be between 32 and 38 degrees Celsius (90 and 100 degrees Fahrenheit). If the water is too cold, the yeast won't activate. If the water is hot, the yeast will die. If this happens, the dough won't rise and the bread will be lumpy and tough. KNEADING: Kneading time depends on your experience. I usually spend between 15 and 20 minutes kneading nonstop. When I first started making bread, it took me up to 45 minutes! So don't worry if it takes a little longer. It can take more or less time. If it's your first time making bread, you may find it a bit tiring. If you're new to kneading, I suggest using bulk kneading; that is, knead for 10 minutes, then rest for 10 minutes until the dough develops gluten (is elastic and manageable). If we don't develop the gluten in our dough, the bread won't rise. Carbon dioxide gas (which gives the dough volume) is generated during resting, and it needs a strong dough that can contain it so it's fluffy when baked. AND MOST IMPORTANTLY: Bread is a matter of practice, A LOT OF PRACTICE. Don't get discouraged if it doesn't turn out the first time. It's normal.
