I'm also leaving you the link to prepare homemade cream puffs or Berliners, a very similar fried bread with a delicious custard filling 👇    • DONAS RELLENAS Suaves y ESPONJOSAS |Dulce ...   HERE'S THE RECIPE 👇🏻 🥐Sweet Homemade Recipes💕 1 kg of wheat flour (10-12 g protein) 12 g of instant dried yeast (36 g if using fresh yeast) 130 g sugar 10 g salt 130 g unsalted butter 4 large eggs (62 g each) 350 ml Milk 1 tbsp. vanilla extract 1 liter of oil for frying the donuts 200 g of sugar for sprinkling Optionally, you can decorate with melted chocolate IMPORTANT POINTS IN BREAD MAKING: *FLOUR: It must be 100% wheat flour that does not contain baking powder (NOT self-raising). The one I'm using contains 12 g of protein. You can find this information on the back of the package, although you can use flour with 10, 11, or 12 g of protein. I don't recommend flour with less than 10 grams, as it would be too refined, wouldn't absorb much liquid (it would be watery), and wouldn't develop the gluten properly, which is what gives bread its structure and makes it rise and become fluffy. EACH FLOUR has a DIFFERENT ABSORPTION CAPACITY; that is, some absorb more liquid than others. You will probably need a little less or more liquid. If so, I suggest you add it little by little, being careful not to add too much liquid so you don't need to add more flour later. TO DISSOLVE THE YEAST: Remember that we are working with a LIVING ORGANISM, and yeast is sensitive to certain temperatures. Use lukewarm water or milk, NOT HOT, so that when you dip your finger in it, it's tolerable and you DON'T burn yourself. If you want to use a thermometer, it should be between 32 and 38 degrees Celsius (90 and 100 degrees Fahrenheit). If the water is too cold, the yeast won't activate. If the water is hot, the yeast will die. If this happens, the dough won't rise, and you'll end up with a dense, hard loaf. KNEADING: The kneading time will depend on your skill and experience. I usually take between 15 and 20 minutes to knead continuously. When I first started making bread, I used to take up to 45 minutes! So don't worry if it takes you a little longer. You may take more or less time. If this is your first time making bread, you might find it a bit tiring. If you're not experienced with kneading, I suggest using the bulk kneading method; that is, knead for 10 minutes, then let it rest for 10 minutes until the dough develops gluten (becomes elastic and manageable). If we don't develop the gluten in our dough, the bread won't rise. During the resting period, carbon dioxide is generated (which gives the dough volume), and it needs a resilient dough that can hold it so that it becomes fluffy when baked. AND MOST IMPORTANTLY: Bread making is a matter of practice, LOTS OF PRACTICE. Don't get discouraged if it doesn't work the first time. It's normal.
