Ingredients 300g pasta (rigatoni or other) 1 head of broccoli 1 bunch of asparagus 1 bowl of peas 1 burrata For the homemade pesto: 100g pine nuts or almonds 1 or 2 cloves of garlic 1 handful of mint, parsley, coriander, or basil leaves 50g Parmesan or Grana Padano cheese 50ml olive oil Salt and pepper Steps: 1. Blanch the asparagus, broccoli, and peas (fresh or frozen) for a few minutes in boiling salted water. Remove the vegetables with a slotted spoon. 2. Sauté the vegetables in 2 tablespoons of olive oil. 3. Cook the pasta al dente in the same hot water used for the vegetables. 4. Make the pesto by blending the ingredients and add 2 or 3 tablespoons to the pasta. 5. Serve the pasta. Pasta with vegetables, cut burrata, seasoned with pesto, salt, pepper, and olive oil.
