Heat tawa, add oil, chopped green chilies, black cardamom and marinated chicken, and fry till chicken light golden on both sides about 10 mins. Bring chicken to the corner of tawa, in center if tawa add oil, turmeric, salt, allspice, crushed coriander, crushed cumin, dried fenugreek leaves, chopperized tomatoes, fry well. Now bring the chicken in the center to the masala, add ΒΎ cup water, cook till boiling, add in 1 cubed tomato on top, cook covered for 15 mins till thick. Lastly add butter, coriander and green chilies. ------------------------------------------- KERI KI SABZI Ingredients Raw mangoes, peeled and finely sliced 2 Onion chopped 2 cups Green chilies chopped 6 Coriander leaves 4 tbsp White cumin 1 tsp Fenugreek seeds Β½ tsp Turmeric Β½ tsp Chili powder 1 Β½ tsp Coriander powder 1 tsp Jaggery 2 tbsp Oil Β½ cup METHOD Heat the raw mangoes, cut into small pieces or slices, heat oil, fry onions till light golden, add in all the dry masala, fry well, then add raw mangoes with fenugreek seeds, finally add Β½ cup water, cook till carry tender, lastly add in gurr, cook till done. ------------------------------------------- MUTTON NAWABI GRAVY Ingredients Mutton Β½ kg Onion sliced 1 Β½ cup Tomato paste 3.4 cup Salt 1 tsp heaped Turmeric Β½ tsp Chili powder 1 tbsp Cumin roasted & crushed 1 tsp Coriander powder 1 tsp Allspice Β½ tsp Yogurt 1 cup Oil as required Mix whole spices as required Sliced green chilies 2-3 Coriander leaves for garnish METHOD Take a bowl, add mutton, sliced onion, tomato paste, salt, turmeric, chili powder, cumin and coriander powder, allspice, yogurt, mix well, marinate for 1 hour. Heat oil in a pan, add whole spices, fry for a few mins, add green chilies sliced, add marinate mutton, fry for 10 mins, add 2 cups water, cook till mutton is tender, add chopped coriander leaves and mint leaves.
