This is UK Wagyu Brisket!

Yorkshire Wagyu full packer brisket from Yorkshire craft butchers, on the Weber Summit Kamado BBQ. A lot of people say UK brisket is no good but, it turns out, it's an amazing option for that perfect Texas style experience! Smoked low & slow over Weber briquettes and a mixture of oak and cherry wood smoke, simple salt & pepper seasoning, it literally melted in my mouth. I suppose you might call this cook "hot & fast" as brisket often takes a lot longer but, either way, I'm really happy with it. Left over brisket recipes welcome and, recommendations for a meat grinder too.
