Today we're featuring a very traditional recipe in the United States known as "Boston Butt" or "Pork Butt," which in Creole means it's made from the shoulder and the best part of the pork shoulder. It's a cut that, in our opinion, is better than pork shoulder for long cooking times because it generates more moisture during cooking, which translates to flavor.
