■Hotkan Farm Restaurant (Higashiichiki-cho, Hioki City) In this episode of "This Shop, This Taste," we'll be introducing a popular restaurant run directly by a chicken farm where you can "eat egg dishes and relax." We'll be introducing dishes that boast fresh eggs and local chicken broth! We're visiting Hotkan Farm Restaurant in Higashiichiki-cho, Hioki City. The restaurant runs its own chicken farm and is popular for its dishes made with freshly laid eggs. The restaurant is run by second-generation owner Oshima Ayumi. She took over the business from her mother, Mariyo, who still works there. When the restaurant first opened, it served dishes in a buffet style using eggs from the chicken farm and local ingredients. However, due to the impact of COVID-19, the restaurant closed in 2020, and just as they were thinking of going out of business, their daughter Ayumi took over. The restaurant has now stopped serving buffets and instead sells bento boxes and offers a menu that makes use of eggs laid that morning and local chicken broth. First, let's introduce the most popular dish! It's the "Dashimaki Donburi" (rice rolled omelet), which is a generous amount of minced meat sauce made with a special dashi blend of chicken meat and chicken bones, poured over a rolled omelet. By feeding the chickens homemade food made with plenty of domestic ingredients, such as olive pomace, soybeans, and bonito flakes from Hioki City, they are able to produce eggs that have no odor. By mixing the eggs with the local chicken soup and frying them, they become fluffy and juicy! The soup is made by simmering chicken meat and chicken bones for 3 to 4 hours, and is light yet rich in flavor. Next, we'll introduce the classic dish "Chicken Rice," which has been served for over 20 years since the restaurant first opened. This dish has been popular since the restaurant first opened, with the desire to let more people taste Kagoshima's local cuisine. The dashi is made by simmering chicken for 3 to 4 hours, and seasoning the soup with kelp, salt, and sweet soy sauce. The long simmering creates a rich flavor! "Hotkan Farm Restaurant" has been loved by locals for many years. The parent-child team works together to provide dishes using "fresh eggs" and "local chicken stock".
