Good morning everyone, today I'm sharing a traditional Tuscan dish that has become famous for its deliciousness and its historical connection to the construction of the dome of Florence Cathedral. Impruneta was home to the kilns where the bricks used by Brunelleschi (considered the founder of Renaissance architecture) were fired. Back then, pieces of humble meat were placed in terracotta pots with red wine, pepper, garlic, and salt, and placed on the edge of the ovens for a very long cooking time. This dish is said to have been greatly appreciated by Brunelleschi. In this video, I'll deviate from tradition only in the cooking method. I'll brown the meat to retain the juices and enhance its flavor, so much so that the Maillard reaction wasn't discovered until 1912. However, you can also cook it without this step; it will be equally delicious. The ingredients are very few: I used 1.5 kg of meat (priest's hat) - a bottle of Chianti - 2 tablespoons of peppercorns - 3/4 cloves of garlic - rosemary, sage, and bay leaves - salt If you prefer a very thick sauce, simply remove the meat once it's cooked and let it thicken, or use less wine, but in that case you'll need to be careful during cooking to avoid sticking. Use cuts of meat that are part of the anterior muscle, if possible; they are best suited to long cooking, and the internal sinews will melt, adding flavor and tenderness.
