RECETA PASO A PASO DE LOS SOBAOS PASIEGOS. UN CLÁSICO DE LA REPOSTERÍA DE CANTABRIA.

Preparing the traditional and exquisite sobaos pasiegos is easier than you imagine. And don't think that they are a simple cake or cupcake... Nothing to see! And of course they don't look anything like the ones we buy in the supermarket! A good artisan sobao is a true delight... with a glass of milk or a coffee... you will love them Start by making your own sobaos capsules... as you will see, it is very easy and entertaining. I have made them with 17x16cm rectangles. I have decided to make the recipe by hand and in a completely artisanal way to honor its status as “sobaos”, just as it was traditionally made 😜. I haven't been able to find Cantabrian butter on this occasion 🙏 but from its Asturian neighbors, which is very tasty too... I'm sure that Cantabria will forgive me ☺️. Whatever it is, use a quality butter in this recipe, the difference in price is not that big either and it is very noticeable later in the flavor and texture... and if you find a good pasiega butter then much better ❤️. You will see how the aroma spreads throughout your kitchen while they bake. For 7 large sobaos: 250g unsalted butter. 250g of sugar. 1 tablespoon of honey. 1 pinch of salt (3g). 3 eggs. 200g of all-purpose flour. 8g chemical yeast or starter (2 teaspoons of dessert or half a packet of Royal).
