Ginger Pot Pudding Recipe Ingredients: The Dough; 3 cups cake flour 1 cup milk (mixed with 4 level tsp bicarbonate of soda, whisked well) 1 tsp salt 2 heaped tsp cinnamon 2 heaped tsp ground ginger 1 cup apricot jam 200 g margarine or butter The Syrup; 8 cups warm water 2 cups sugar (white or brown, whichever you prefer) 2 heaped tsp cinnamon 2 heaped tsp ground ginger Instructions: Prepare the Dough Base: Place the margarine (or butter) and apricot jam in a saucepan. Heat until the jam has completely dissolved. Remove from the heat. Mix the Batter: Whisk the milk and bicarbonate of soda together well, then add it to the butter mixture and stir. Fold in the flour, salt, cinnamon, and ginger. Stir well with a wooden spoon until combined. Make the Syrup: In a large, deep pot, combine the water, sugar, cinnamon, and ginger. Stir briefly at the start. Bring to a boil, then turn the heat down to medium (setting 3). Cook: Scoop heaped tablespoons of the dough into the boiling syrup. Be careful not to place them on top of each other. The Golden Rule: Immediately place the lid on the pot and let it cook for 30 minutes.
