Creamy Condensed Milk Rice Pudding!🍚🥛 Welcome back to my kitchen! 🧡 If you love traditional, comforting South African puddings, you are going to absolute fall in love with this one! Today, I am showing you how to make the ultimate Creamy Condensed Milk Rice Pudding. It is incredibly rich, velvety, and tastes remarkably like a classic sago pudding—but made with everyday rice! This recipe is incredibly fast and easy to whip up. I will be taking you through it step-by-step, showing you exactly how to get that perfect, dreamy, spoon-licking texture without any hassle. It is the perfect sweet treat to warm up your family on a cozy afternoon. I have written out the full recipe with all the measurements below so you can follow along. Let's get cooking! 👇 Creamy Condensed Milk Rice Pudding Recipe Ingredients: 1 cup white rice 2 cups water (for the initial boil) 1 can (385 g) Condensed Milk 3 cups milk 2 large eggs (well beaten) 2 tablespoons butter or margarine 2 teaspoons vanilla essence a good pinch of salt ground cinnamon for dusting Method: Boil the Rice: You don't absolutely have to rinse the rice, but I always prefer to rinse mine first. Cover the rice with the 2 cups of water and simmer for about 15 minutes until soft, allowing it to cook completely dry. Add the Milk & Condensed Milk: Once your rice is cooked dry, pour in the 3 cups of milk and the entire can of condensed milk straight into the pot. Stir it all together very well. The Secret Egg Mix: Keep a close eye on the pot as it starts to heat up. As soon as the milk mixture is lukewarm, scoop a little bit of it out of the pot. In a separate bowl, mix this lukewarm milk thoroughly with your 2 beaten eggs, and then pour the whole egg mixture right back into the main pot. The Thicken & Stir Phase: Now, set your stove plate to No. 4 so the mixture doesn't catch or burn too quickly. Stir continuously with a wooden spoon. It will take about 6 minutes for the mixture to reach a proper boil. Watch for the Splatter: Keep stirring continuously with your wooden spoon from the boiling point onwards. At around 13 - 15 minutes, you will see the pudding thicken beautifully and it will start to sputter and splatter quite a bit. That is your sign that it is ready—remove the pot completely from the stove plate! Finish & Flavor: With the pot off the heat, add your 2 heaped tablespoons of butter or margarine, the pinch of salt, and the 2 teaspoons of vanilla essence. Stir it through beautifully until everything is completely melted, smooth, and glossy. Serve: Scoop the hot pudding straight into lovely ramekins or pudding bowls. Dust generously with ground cinnamon and enjoy every single bite!
