Hearty Peasant Pasta with Sausage, Chicken & Beans

This comforting Italian inspired pasta is loaded with flavor and comes together with simple ingredients for the ultimate comfort meal. We start by rendering pancetta, then cook sliced spicy Italian sausage and chunks of chicken before building a flavorful sauce with homemade garlic herb compound butter and chicken broth. Cannellini beans, escarole, and fresh tomato bring everything together before tossing it all with rigatoni and finishing with parmesan and parsley. Recipe Ingredients Pasta 3/4 lb rigatoni 2 medium spicy Italian sausages, sliced 1 chicken breast, cut into chunks 1 cup pancetta 1 can cannellini beans (drained) 1/2 large tomato, diced 1 head escarole, chopped 3 cups chicken broth 2 tbsp cornstarch Parmesan cheese for finishing Fresh parsley for garnish Compound Butter 1 cup butter 3 cloves garlic, minced 1 tbsp basil 1 tbsp parsley 1 tsp rosemary 1/2 tsp red pepper flakes 1/2 tsp salt 3 tbsp grated parmesan Directions Bring a large pot of salted water to a boil for the rigatoni. Heat the chicken broth in a separate pot. In a large pan, render down the pancetta until crispy and flavorful. Add sliced spicy Italian sausage and chicken chunks to the pan and cook thoroughly. Stir in the compound butter and continue cooking until everything is coated and fragrant. Whisk cornstarch into the heated chicken broth until fully combined to create the chicken jus lié. Add rigatoni to boiling water and cook until al dente. Add cannellini beans, chopped escarole, and diced tomato to the pan and mix together. Pour the chicken jus lié into the pan and stir well to combine. Add cooked pasta directly into the sauce and toss everything together. Finish with grated parmesan and mix thoroughly. Plate and top with extra parmesan and fresh parsley.
