It's spring these days, so there's a lot of mugwort coming out, right? I also planted some mugwort in a corner of my garden, and I find myself making a lot of dishes with it. Today, although it's a bit more labor intensive, I tried making steamed buns with red bean paste. There are many ways to make red bean paste. After much trial and error, I've found that the most foolproof, delicious, soft, and healthy red bean paste is the one I've shared today. Sometimes the red beans are dry and not soft, and other times they're too sticky, making bread making difficult. If you combine 2 1/2 cups of soaked red beans with 1 1/2 cups of water and cook it in a pressure cooker using brown rice, you'll get a red bean paste with just the right consistency. You'll experience it once. Adding cashew nuts adds a rich, luxurious flavor. If you master this one method, you'll be able to confidently make a variety of breads using red bean paste. I highly recommend you try it. Red Bean Paste Bread Ingredients: 2 cups whole wheat flour, 1 cup unbleached wheat flour (You can use only whole wheat flour or only domestic wheat flour.) 1 teaspoon salt Yeast solution: 1/4 cup warm water, 4 tablespoons honey, 1 teaspoon yeast Dissolve honey in water, add yeast, cover, and let sit for about 7 minutes. Mugwort solution: Wash 200g mugwort thoroughly, blanch in boiling water with a pinch of salt for about 1 minute, then rinse in cold water, squeeze out, finely chop, and grind finely with 3/4 cup water. Red bean paste: 2 1/2 cups soaked red beans (Soaking 1 cup of dried red beans (200g) for about 10 hours will yield 2 1/2 cups.) 1/2 teaspoon salt, 1 1/2 cups water, 1/4 cup monk fruit sweetener (or raw sugar), 2 tablespoons cashew nut powder, 1/2 cup crushed walnuts (optional) Soak red beans, salt, and water Place in a pressure cooker and cook brown rice (takes 50 minutes). Once the red beans are cooked, mash them while they're still hot and add monk fruit sweetener, raw sugar, cashew powder, and walnuts. Mix in the mixture. Adjust the sweetness to your taste. Directions 1) Mix 3 cups of flour and 1 teaspoon of salt in a bowl, then add the yeast water. 2) Roughly mix with a spatula, then add the mugwort water and mix until a lump forms. 3) Knead by hand (about 7 minutes) or in a food processor (1 minute). Cover with plastic wrap and let rise in a warm place for 1 hour. 4) After 1 hour, divide the dough into 12 pieces, fill with red bean paste, shape into steamed buns, and place in a steamer to rise again (secondary rise).
