Mango Soft Caramel Recipe | Tuesday’s Tips with Jacques Torres

In today’s Tuesday Tips, I’m showing you how to make a soft caramel flavored with mango. This recipe is simple and can be adapted with different fruit purées depending on your taste. The result is a smooth, rich caramel with a beautiful texture. ⸻ Ingredients 300 g sugar 230 g corn syrup 180 g mango purée 100 g butter ⸻ Instructions 1. Make the Caramel In a saucepan, combine sugar and corn syrup. Cook over medium heat until it reaches a light to medium caramel color. ⸻ 2. Add Mango Purée Carefully add the mango purée (it will bubble). Stir gently and allow it to combine. ⸻ 3. Add Butter Add the butter and continue cooking. Bring the mixture to 246–248°F (119–120°C). ⸻ 4. Pour & Set Pour the caramel onto a silicone mat framed with rulers or a mold to control thickness. Let cool for about 30 minutes. ⸻ 5. Cut Once set, lightly oil a knife and cut into squares. ⸻ 6. Store Wrap individually in cellophane or store in a container to prevent sticking. ⸻ A smooth caramel with a hint of mango and a beautiful texture. Bon appétit.
