Tuesday's Tips Chef Jacques Torres: Whipped Caramel

Bonjour my friends! Today we are diving into the sweet, buttery world of caramel, but with a twist! We’ve taken our classic golden caramel and whipped it until it’s light as air and velvet-smooth. It’s the perfect way to add a little "wicked" touch to your favorite dessert. How would you eat this? With a spoon? I won’t tell! Ingredients:  500g of sugar  350g of cream  150g of butter Add sugar to a pan on the stove and let cook. Once the sugar starts cooking,stir until melted. The sugar will turn brown and become a thicker consistency, continue to stir until all granules are melted. Once the sugar is fully melted, add a tiny bit of cream at a time. Then add in pieces of butter and bring to a big boil. Once boiling, allow the mixture to reduce for 30 seconds. Then add to a bowl and leave in the fridge overnight. The next day, mix your caramel until light brown and consistency is looser. Now add to some fruit or your favorite dessert and voilà your Whipped Caramel is ready to eat!
