The launch came after delays due to unstable material procurement. Fukuoka Prefecture, which boasts the highest number of soy sauce producers in Japan, sees residents' daily salt intake fall short of the target of less than 7 grams. Therefore, the prefecture launched a salt reduction project in 2023, collaborating with local universities and soy sauce associations to develop a low-sodium soy sauce with a Kyushu-style flavor, increasing the variety available. The product will be gradually released in supermarkets. Furthermore, salt reduction efforts are spreading to companies; the Fukuoka Financial Group headquarters cafeteria offers a low-sodium menu every Wednesday, and this soy sauce has been introduced. Taste tests have shown it has been well-received, with employees reporting that it has the same sweetness, umami, and satisfaction as regular soy sauce, and positive effects on employee health are anticipated.
