A Man of the Sea and the Knife: The Untold Life of a Japanese Fisherman-Chef

Hello! Welcome to "Japanese Kitchen Tour". This time, we visited "Umimori", a unique fish shop in Fukuoka City, Japan. What makes this shop special? The owner, Mr. Mori, is an active fisherman! 🐟 He catches fish in Hakata Bay, right in front of the shop, and brings them directly to the store. Amazingly, the fish arrive at the shop just 15 minutes after being caught. This is the ultimate "Farm to Table" experience! Mr. Mori uses a traditional fishing method called "Small-scale Bottom Trawling" (known locally as "Ebikogi"). He catches rare natural "Black Tiger Prawns," Blue Swimming Crabs, and seasonal fish. However, he is also facing environmental changes in the ocean. "I want to protect the future of the sea and Japanese fish culture." With this passion, he releases crabs carrying eggs back into the sea and educates customers about the value of local fish.
