Potato and cod come together with garlic, lemon, and extra virgin olive oil to create a smooth, glossy, and delicious emulsion. Perfect for dipping bread and a great way to impress with no fuss. Traditional Andalusian flavor that's always a hit at family gatherings. 🍅 Ingredients 🐟 500g cod (soaked overnight, leaving a touch of salt) 🥔 1kg potatoes 🧄 3 or 4 cloves of garlic 🥚 1 egg yolk 100ml extra virgin olive oil (to taste) 🧂 Salt (adjust at the end) 🍋 Juice of 1/2 lemon ⚡🍳🔥 Step-by-step instructions 1️⃣ Soak the cod overnight, changing the water 1-2 times; leave a touch of salt. 2️⃣ Boil peeled potatoes in cold water with the cod. Once boiling, remove the cod after 5 minutes and continue cooking the potatoes until tender. 3️⃣ In a mortar, crush the garlic and add the lemon juice. 4️⃣ Clean the cod (remove skin and bones) and flake it. 5️⃣ In an earthenware dish, mash the hot potatoes. Add the cod and the egg yolk; mix. 6️⃣ Emulsify: slowly drizzle in the oil while stirring with a pestle until smooth. Adjust the seasoning with salt, garlic, and lemon. 7️⃣ Taste and adjust the seasoning. Serve warm with a drizzle of extra virgin olive oil. ✅ 💡 Manoli's Tip: Warm the oil slightly before emulsifying and stir gently; the cream will be smoother and shinier. 🌍 Origin: It's called "meneao" (stirring) because of the constant back-and-forth motion while emulsifying in the earthenware dish.
