Have a wonderful day! 👉 INGREDIENTS 🌱 200g white beans 🥬 100g fine green beans 🌿 100g cardoon 🥔 4 or 5 medium potatoes 🐖 2 or 3 salted pig's trotters, quartered 🥚 3 eggs 🧴 Olive oil 🧂 Salt 🧄 4 or 5 cloves of garlic 🌻 Optional: a little sunflower oil 👉 STEP BY STEP 1️⃣ Soak the beans overnight. Cook the beans in a pressure cooker along with the salted pig's trotters. 2️⃣ After about half an hour, open the pressure cooker and check the beans. If they are cooked, remove them; if not, cook them a little longer. The trotters need at least 45 minutes to cook thoroughly. 3️⃣ Add the chopped green beans and the roughly chopped potatoes. If necessary, add more water. In the last 5 minutes, add the cooked cardoon and the beans. 4️⃣ Separate the egg yolks and whites. Add the whites to the broth to gently set. In a mortar, crush the garlic with a little salt and a cooked potato. 5️⃣ Add the egg yolks and gradually whisk in olive oil 🧴 until you obtain a thick aioli. For a milder flavor, you can alternate with a little sunflower oil. 6️⃣ Take a couple of tablespoons of garlic aioli, mix them with a little broth, and add it to the stew with the heat off, stirring well until it's smooth and creamy. Adjust the salt and serve the remaining garlic aioli with toasted bread. 👉 PERSONAL TIP Don't add the final mixture with the heat on, as the egg yolk could curdle.
