"Mediterranean Calzone" INGREDIENTS: DOUGH (for 6 calzones) 1 kg 0000 flour 600 cc warm water 50 g fresh yeast 20 g salt 1/2 cup olive oil --FOR THE FILLING (for one calzone) 1 grilled eggplant 20 g soaked sundried tomatoes Fresh basil, to taste Oregano, to taste 1/2 cup Greek olives 100 g grated mozzarella 100 g provolone 1 cup tomato sauce Garlic in olive oil, to taste 5 preserved artichoke hearts --FOR GARLIC 100g grated provolone cheese. Dried oregano, to taste. Olive oil, to taste. Coarse salt, to taste. PROCEDURE: For the dough, form a ring with the flour and salt. Place the warm water, yeast, and oil in the center. Mix and knead. Let the dough rest covered for half an hour. Divide into 300g balls and rise until doubled in size. Roll out into a round. Place the filling using half of the circle, so you can fold the dough later to make the pleat. Make the pleat. Place on a baking sheet until cooked and golden brown at 200°C.
