Here is a recipe for Dongchimi that can be easily made with just radish and salt. Anyone can easily make this without sugar, artificial sweeteners, fruit, starch paste, soda, or a blender. Please give this refreshing and cool sugar-free Dongchimi a try. ▶ Ingredients 2 kg radish (1 1/2 medium-sized radishes or 1 large radish) 6 tablespoons coarse salt (approx. 100 g) 3 liters water 1/2 onion (medium size, approx. 100 g) 1 green onion 15 cloves garlic (approx. 100 g) 1 piece ginger (approx. 40 g) 3 Cheongyang peppers Tablespoon = Tbsp / 15 ml ▶ Cooking Instructions 1. Cut the radish into fan shapes about 1 cm thick. 2. Prepare the onion, green onion, garlic, ginger, and Cheongyang peppers. 2. Place the radish in a kimchi container, add 6 tablespoons (approx. 100g) of coarse salt, mix well, and let it marinate for about 1 hour. (Turn it over once in the middle to ensure even marinating.) 3. Do not rinse the marinated radish or discard the brine; instead, add the prepared ingredients and water. 4. Close the lid and let it ferment at room temperature. (Approx. 2 days in cool conditions / Approx. 1 day at around 20℃ / Approx. 12 hours in hot conditions) 5. Check the fermentation status, then refrigerate.
