Paneer Butter Masala: --------------------- Ingredients: ------------ 200 g paneer, diced 1 tsp butter (for boiling the vegetables) 1 tbsp butter (for frying the paneer) 2 tbsp butter (for the gravy) 1 tsp butter (for finishing) 2 onions, roughly chopped 3 tomatoes, roughly chopped 6 cashews 2 almonds 1 tsp ginger-garlic paste 1 tbsp Kashmiri red chilli powder ½ tsp Kashmiri red chilli powder (for frying the paneer) ½ tsp red chilli powder (adjust to taste) 1 tbsp coriander powder ½ tbsp cumin powder ½ tbsp garam masala 1 tsp tomato sauce 1 tbsp kasuri methi, crushed 2 tbsp fresh cream ½ tsp sugar Salt, as required Water, as needed Method: --------- 1. Heat 1 tsp butter in a pan. Add the roughly chopped onions, tomatoes, cashews, almonds, and salt. Pour in a little water and give it a quick mix. 2. Cover and cook until the tomatoes become soft. 3. Turn off the heat and let the mixture cool completely. Grind it into a smooth paste. 4. In another pan, heat 1 tbsp butter. Add the 200 g diced paneer and sauté well. 5. Sprinkle ½ tsp Kashmiri red chilli powder and fry until the paneer is lightly crispy. Keep aside. 6. Heat 2 tbsp butter in a pan. Add the ginger-garlic paste and sauté until the raw smell disappears. 7. Add 1 tbsp Kashmiri red chilli powder, coriander powder, cumin powder, and garam masala. 8. Cook the spices for 2 minutes. 9. Pour in the prepared onion-tomato paste and mix well. 10. Rinse the mixer jar with a little water and add it to the gravy. 11. Once the gravy starts boiling, add 1 tsp tomato sauce and mix well. 12. Taste the gravy and adjust the seasoning if needed. 13. Add ½ tsp red chilli powder and salt if required. Mix well. 14. Cover and cook until the butter separates from the masala. 15. Add ½ tsp sugar and 1 tbsp crushed kasuri methi. Mix well. 16. Add the fried paneer and gently combine. 17. Stir in 2 tbsp fresh cream and mix well. 18. Cover and cook for 2 minutes, then turn off the heat. 19. Add 1 tsp butter, mix gently, cover, and let it rest for 10 minutes. 20. Serve hot with rice, chapati, dosa, or parotta. 21.
